We are going to do our best to escape the winter coldrums, so we are taking our inspiration from the vast fisheries of the warm and sunny Pacific Ocean and going on an eating vacation to the South Pacific Islands!

For a creamy finish, we will prepare our version of Haupia,

HANDS ON SUSHI CLASS
(featuring "Chicago's Best" sushi as seen on WCLTV )
Learn about the fish, rice, sushi, and equipment.
We will first demonstrate an assortment of maki rolls and nigiri.
During the demonstration, we will serve our home made miso soup and ginger avocado tuna salad, after which it's on to rolling your own dinner.
Each couple will have a kit with all the necessary ingredients to roll all the sushi demonstrated.
Four maki and 3 nigiri: All you can eat.
Deluxe Tuna maki (as seen on TV) and Salmon Mango maki (As seen on TV)
Yellowtail thin maki and California maki
Salmon, tuna and, yellowtail nigiri
Bring a friend, a bottle of wine and your appetite,

Dirk’s Fish and Gourmet Shop
Why check it out: Dirk’s might look like more of a market than a restaurant, but it’s one of the city’s premiere sources for sustainable seafood. Diners can come grab some amazing sushi, take a cooking class, and then pick up fish to make for dinner that night. Plus, Dirk is just so damn nice.
On the menu: Laughing Bird Shrimp, a sustainable farm-raised Caribbean white shrimp, simmered in Thai coconut basil sauce, served over jasmine rice with a side of tangy vinegar cucumber salad.
Can’t make it to Chicago Gourmet? The shop hosts a weekly free grilling demo from 12 p.m. to 3 p.m. on Saturdays, and this weekend it will be dishing out exactly what it’s serving at the fest, along with a variety of other goodies, like salmon and tuna burgers. That Thai coconut basil simmering sauce is also always available in the shop, and it works well as a marinade too.


We had a great time at the the show this year and want to thank everyone who stopped by to say"Hi" and have a taste of our Shrimp and Thai Simmering Sauce. Everyone seemed to like it and it was lots of fun. The recipe is on our recipe page so you can make it yourself. Two days of sampling to over 3000 people was a big job but we were the last ones sampling in our booth both days and loved it. We pulled two lucky winners from our drawing for a $100.00 gift certificate on each day of the show and we thank everyone who participated.
There were a few problems at the show this year that need to be addressed for next year, namely more food and shorter lines. I think Sundays crowd was especially large due to the Groupon sales. If you would like to email me your comments, I will be happy to pass them on. We will put in our two cents worth of opinion in with the appropriate people and it will improve next year. We want everyone to have a great eating experience for the money! See you all there next year.
