Fish Picatta
|

- This simple recipe will work well with
most fish.
- The flavor combinations
are great and it’s quick to
prepare
- This
recipes serves two people.

Ingredients
|
- 1
lb. of sole, skate, snapper, tilapia, (a few of my favorites for
this dish). Almost any thin skinless fillet of most fish will work,
though.
- Salt
and pepper(to taste) Flour 1/4
cup olive oil 1/2
tablespoon chopped garlic 2
tablespoons small capers 1/2
cup white wine (whatever you're drinking)
- 1/4
cup lemon juice

Directions
|
- Season
the flour with a little salt and pepper.
- Dust the fillets with the
seasoned flour.
- Saute the fish in olive oil until the fillets get a little browned,
about a minute per side.
- Remove from the pan and set aside.
- Add chopped garlic to the hot oil and cook for about a minute.
- Next add capers, wine, and lemon juice. Bring back to a simmer.
Set the fish fillets carefully into the sauce.
- Saute the fish for about 3 to 4 minutes per side.
- Set the cooked fish on the plate and pour remaining sauce over
the fish.
- Serve with rice or steamed vegetables on the side and don't
forget the rest of the wine!
