Fish Picatta
 
  • This simple recipe will work well with most fish.
  • The flavor combinations are great and it’s quick to prepare
  • This recipes serves two people.

Ingredients
  • 1 lb. of sole, skate, snapper, tilapia, (a few of my favorites for this dish). Almost any thin skinless fillet of most fish will work, though.
  • Salt and pepper(to taste) Flour 1/4 cup olive oil 1/2 tablespoon chopped garlic 2 tablespoons small capers 1/2 cup white wine (whatever you're drinking)
  • 1/4 cup lemon juice   

Directions
  • Season the flour with a little salt and pepper.
  • Dust the fillets with the seasoned flour.
  • Saute the fish in olive oil until the fillets get a little browned, about a minute per side.
  • Remove from the pan and set aside.
  • Add chopped garlic to the hot oil and cook for about a minute.
  • Next add capers, wine, and lemon juice. Bring back to a simmer. Set the fish fillets carefully into the sauce.
  • Saute the fish for about 3 to 4 minutes per side.
  • Set the cooked fish on the plate and pour remaining sauce over the fish.
  • Serve with rice or steamed vegetables on the side and don't forget the rest of the wine!
