en Papilliote
|
|
- En papilliote is simply fish wrapped in paper and steamed.
- This easy and quick recipe works well with most fish. Some of my favorites are salmon and halibut.
- Preheat the oven to 425 degrees
NOW
TO THE KITCHEN…

Ingredients
|
- 2 -8oz.
fillets of fish, skinned
- 4 asparagus
spears
- 2 large
florets of broccoli
- 6 green
beans
- 2 slices
of red onion
- 2 slices
each of red, orange, and yellow peppers
(you can use almost any vegetable you like or any combination you
like)
- 2 tablespoons
of olive oil
- 1 lemon,
cut in half
- Salt
and pepper to taste
- 2 sheets
of parchment paper (foil is an option also, especially if you want use the grill).

Directions
|
- Julienne all of the vegetables. Place in a small bowl,
- add
olive oil, salt, pepper, and squeeze one half of the lemon into
the mix.
- Fold
the parchment paper in half, and then unfold it.
- Place
the fish on the
top half of the paper with the bottom edge of the fillet on
the crease.
- Divide
vegetable mix in half and place each half onto each fillet.
- Fold
the paper over the fish and vegetables so that the edges
of the paper meet.
- Starting
in one corner, roll the edges tightly together around the fish,
until a closed pouch is formed.
- Fold
the final corner very
tight or you
can use a paper clip to seal the package.
- Place
the package on a pan and bake 15 to 18 minutes.
- Remove
fish from the oven.
It
can
be served
and eaten directly in the paper or slid onto a serving
plate.
