Simply Delicious Caesar Dressing
 
  • This is Terry's home recipe for a simply delicious caesar dressing that is guarantied to kick your salad up to new level!
  • Make some extra to keep in the refrigerator for other salads or as a great marinade for fish, scallops or even chicken.
Ingredients
  • 3/4 cup fresh lemon juice
  • 2/3 cup extra virgin olive oil
  • 2 tablespoons fresh garlic, chopped
  • 2 tablespoons dijon mustard
  • 2 tablespoons parmesan cheese, grated
  • 1 can anchovies
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Directions
  • Put all ingredients in food processor except for olive oil and parmesan cheese. Blend until smooth. Slowly drizzle in olive oil until thickened. Add cheese last with just a couple of quick pulses.
  • Serves 4 to 6 people on a salad or makes enough marinade for about 3 t0 4 pounds of fish. Enjoy!
