"Light" Crab Bisque
|
|
- This recipe uses rice as a thickening agent, replacing most of the butter,cream, and flour in a traditional bisque.
- You can use whatever seafood you like, crab, shrimp or lobster.

Ingredients
|
- 6 cups fish stock (available @ Dirk's)
- 4 cups shrimp or lobster stock( available @ Dirk's)
- 1 cup canned diced tomatoes
- 1 cups onions, chopped
- 1 tablespoon butter
- 1/2 cup arborio rice
- 2 pounds crab meat (use clawmeat or "special" crabmeat for the most economical choice).
- 1/2 cup heavy cream
- 1/2 teaspoon cayenne pepper
- 1 teaspoon sriracha hot sauce
- 1 teaspoon salt
- 1/4 cup of white wine

Directions
|
- Saute onions in butter until tender, about 4 to 6 minutes.
- Add diced tomatoes
- Add both stocks to pot and bring to a simmer.
- Add rice to stock mixture. Stir and continue cooking on medium heat until rice is tender.
- With a stick blender, puree mixture.
- Add all other ingredients to pot. Stir and bring back to a simmer..
- Serves 8 to 10 people
- Cooked lobster or shrimp work equally well with this recipe.
