Grilled Sea Scallops
|

- We love the crispy crust and the creamy center of a perfectly grilled scallop and you will too. Eat them as a main course, on a salad or even in a sushi roll. Quick and easy, here are a couple of recipe options.
- When you purchase sea scallops be sure that they are "dry pack". This means that they are not soaked in a chemical bath to retain water. A sure sign of treated scallops is if they are sitting in a white liquid in the pan. Good scallops should be clean and a little tacky to the touch. These dry scallops can even be used raw for sushi which means you really can't under cook your scallops while grilling.
- When marinating dry scallops, keep in mind that they are like sponges and really soak up a liquid, only marinate for about 15 minutes to 1/2 hour at most.

Ingredients |
- 1/2 pound sea scallops per person
Marinade I
- extra virgin olive oil
- lemon zest
- herbed sea salt
Marinade II
- 1/4 cup ketchup
- 2 tablespoons fresh garlic, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon hot smoked paprika
- 2 teaspoons kosher salt

Directions |
- Pick your marinade of choice, use the ones above or one of our fresh marinades. Whichever you chose, marinate scallops for no more than 1/2 hour at room temp.
- Mix all ingredients together with scallops. You may grill them individually or double skewer them.
- Prepare grill, it should be medium high. Using tongs, place scallops on hot grill, rotate after 2 to 3 minutes per side.
