Grilled Sardines
|

- These small fish are very high in omega 3 and quite healthy for you plus they are very sustainable which is healthy for the sardine population.
- My favorite way of cooking these tasty little fish is on the grill. Cook them whole, remove the bones and place on salad, rice, or couscous. Crispy and flavorful!
- A great alternative to sardines are a fish called saury. Its a small mackerel from the Pacific Ocean and taste very similar. We carry them frozen all the time. Same health benefits as sardines.

Ingredients

- 1 pound whole sardines, scaled and cleaned
- 1 tablespoon olive oil
- 1 teaspoon herbed sea salt (available at Dirk's)

Directions
|
- Brush sardines with olive oil and dust with sea salt. Leave at room temperature for about 20 to 30 minutes.
- Place fish directly on hot grill, cook about 2 to 3 minutes per side.
- Remove head, slide knife along the backbone to separate the fillets and remove large bones. You may encounter a few small bones which are edible. Enjoy
