 Crudo of Yellowfin Tuna
  • Crudo is a raw presentation, think Italian sushi, served with a few complimentary flavors for the perfect appetizer or first course.
  • Try building your crudo plate on a block of salt for great presentation and a touch of salty flavor.

  • 1 lb FRESH high quality tuna, yellowfin or bigeye, an even thick piece from the loin.
  • 1/4 cup scallion, thinly sliced
  • 1/4 cup fresno peppers, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 12 cloves of fresh garlic, peeled
  • 12 fresh basil leaves, thinly sliced
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons oil cured black olives, finely chopped
  • 1 teaspoon sea salt

  • Simmer garlic cloves in olive oil for 1 hour. Allow to cool to room temp before using.
  • Wrap tuna in plastic wrap and palce in freezer for about 15 minutes to chill before cutting. This firms the tuna and makes cutting thinner slices easier.
  • Slice tuna into roughly 1/8 inch slices, gently flatten each piece with your fingers before arranging on serving platter. Sprinkle generously with salt, then scaliions, olives and peppers and basil.
  • Remove garlic cloves from olive oil. Combine olive oil and lemon juice in a container with a lid, Shake until the vinaigrette is emulsified. Spoon vinaigrette over tuna. Serve immediately.
