BBQ Corvina Poor Boys with
Cajun Mayo
|

- This sandwich can be made with any type of firm fleshed fish, such as grouper, snapper or even tilapia. We like the mild and firm flake of corvina best though.
- A fresh soft crusty french bread works well for this sandwich.
- This wet rub works well on almost any piece of grilled or broiled fish.

Ingredients

Wet BBQ Rub for Fish
- 1/3 cup extra virgin olive oil
- 1 tablespoon fresh garlic, chopped
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 pounds fresh corvina, skinned and cut into 6 ounce pieces.
Cajun Mayo
- 1/4 cup canola mayo
- 2 tablespoons ketchup
- 1 tablespoon sriracha
- 1 teaspoon fresh garlic, chopped
- 1/2 teaspoon smoked paprika

Directions
|
- Mix all ingredients for rub together in a ziplock bag. Add fish and massage rub onto fish through the bag. Marinate for about 45 minutes at room temperature.
- Mix all ingredients for cajun mayo together in a small bowl and set aside.
- Grill fish on high for about 4 to 5 minutes per side until done.
- Spread mayo on bread, add fish and top with spicy slaw mix.
- Serves 4 to 5 people. Enjoy!
